Here are some of my Chili facts

Habanera's, red Chili's and Jalapenos have been ground into powder to bring those mundane bowls of your friend's chili back to life.

Salsa is made, canned in Ball jars, now nicely aged to perfection.

If you can find "baked" chips, then Salsa and Chips are a great "no fat" snack that's healthy for you.

Always keep the chili hot - it will fire you up during these cool Fall Weekends.

Have you heard of my famous three sisters recipe? Yeh, Jalapeno, Cayenne, and Habanera - guaranteed to make three things happen:

Your eyes will get red and water profusely

A sweat  will breakout on your forehead

Your nose will start running

bullet

Then a big smile will beak out on your face

 

Chili Recipe with Beer - no Beans (Chiliheads only)

bullet2 pounds beef Chuck, trimmed and cubed
bullet2 Tbsp canola oil, ok a little healthy
bullet1 onion (medium chopped)
bullet2 cloves Garlic - crushed like they should be
bullet1 cup Beef broth
bullet1 can brew
bullet2 Dried Chipotle Chiles (canned will work)
bullet2 Dried Anaheim Chiles
bullet2 Dried Cayenne Chiles
bullet1 tsp Cumin
bullet1 tsp Oregano
bullet1 tsp Paprika
bullet1/2 tsp Sea Salt
bullet1/2 tsp Sugar

Put the brew and dried chilies into a saucepan, heat until boiling, then simmer for 1/2 hour to to get everything softened up right, cool, then nuke in a blender or food processer to make a red sauce to add to the crock pot (If you don't like the bits of chili skins, then strain them out before adding to the crock pot. Sauté onion  and garlic in 2 tbsp canola oil, add Chuck cubes and brown nicely, get crock pot, add chuck, onions garlic & beef broth. red sauce and other spices and, cook for 4 hours.

Chili Recipe with Salsa - no Beans (Chiliheads only)

bullet2 pounds beef Chuck, trimmed and cubed
bullet2 Tbsp canola oil, yes - a little healthy
bullet1 onion (medium chopped)
bullet2 beef bouillon cubes
bullet2 cups salsa (chunky is better)
bullet8 oz of tomato sauce
bullet2 dried cayenne peppers (a little heat is good)
bullet1 tsp Cumin
bullet1 tsp Oregano

Sauté onion  in 1 tbsp canola oil, add another 1 tbsp oil and brown Chuck cubes nicely, then drain and put in crock pot. Add salsa, tomato sauce and spices. Make beef broth by dissolving the bouillon cubes in 2 cups of hot water, add and cook for 4 hours.

Easy Chili Recipe #1 with Beans (not for purists)

bullet1 pounds ground Chuck
bullet1 can Brooks Chili beans (mild or med)
bullet1 can stewed tomatoes
bullet1 onion (medium)
bullet1/2 can water
bullet1 Tbsp Worcestershire Sauce
bullet 1 Tbsp Chili Powder
bullet1/2 tsp Salt
bullet1/4 tsp Pepper

Brown meat, cut up onion, add beans, onion, tomatoes, water and everything else, cook for 45minutes to an hour.

Easy Chili Recipe #2 with Beans (not for purists)

bullet1.5 pounds ground Chuck
bullet1 large can Brooks Chili-Hot beans
bullet1 can diced tomatoes
bullet1 can tomato sauce
bullet1 onion
bullet1/2 green pepper
bullet1/2 can water or beer
bulleta few frozen Jalapenos from freezer
bulleta couple dried Cayenne peppers from string in pantry
bulleta few shakes of salt, pepper, cilantro, cumin, habanera & oregano and anything that looks good as you peruse through the pantry.

Brown meat, cut up onion, throw everything in crock pot, cook for the rest of the day and then enjoy with your favorite beverage, try fresh corn bread on the side.
